Hooray for the weekend! Weekend means brunch means pancakes means don’t go totally rogue means whole wheat pancakes means blah means whole wheat banana Nutella pancakes! Weekend saved. You’re welcome. 😉 These pancakes are ready in only 20 minutes and are super satisfying. They’re better for you than traditional buttermilk pancakes made with enriched flour, but just as decadent, thanks to our trusty, always there when you need it friend, Nutella. (What can’t you do with this stuff?!). Mr. Hulk loves him some pancakes and waffles, so I make them quite a bit for him (mostly waffles). These, however, I (surprisingly) made for myself (I saved him some though) on a super blah rainy day that needed to be saved. (*cue Nutella*) But so I wouldn’t have to rationalize eating it liberally off the spoon (which I may or may not have done regardless), I figured I’d incorporate it into some kind of real breakfast. And wouldn’t you know it, we just so happened to have a couple of over-ripened bananas awaiting their destiny. And everyone knows bananas and Nutella are a match made in culinary heaven.
I adapted this recipe just a bit from Maegan, The Baker Mama. Her super easy whole wheat banana pancakes didn’t need much from me… Just Nutella. 😉
- 1½ cups white whole wheat flour
- 2 tablespoons honey
- 2 teaspoons baking powder
- ¼ teaspoon nutmeg
- 1 large egg
- 1¼ cups unsweetened plain almond milk
- 1 teaspoon vanilla
- 2 mashed bananas
- ¼ cup Nutella
- Preheat griddle or nonstick skillet.
- In a small bowl, mash the bananas. Add the honey, egg, almond milk, and vanilla mix well to combine.
- In a large bowl, whisk together the flour, nutmeg, and baking powder. Pour in the wet ingredients and stir until thoroughly incorporated. Stir Nutella into the batter until it's swirled throughout.
- Scoop pancake batter onto the preheated griddle or pan in even rounds. Cook until small bubbles form in the center of each pancake, then flip and cook the other side until both sides are lightly browned. Serve with maple syrup or agave on the side.
