Week 1 of NFL football is officially in the books and we’re already awaiting Week 2 with great anticipation. But everybody knows football season isn’t much without friends and snacks to enjoy them with, am I right?! So here’s a quick and easy (and dare I say healthy!) snack to pass around while you cheer your team on: Spicy Cilantro Lime Guacamole!
Now historically we’ve not been big guac eaters. Like at all. However, avocados are packed full of good-for-you-ness, with lots of vitamins, fiber and heart-healthy fats. (Did you know avocados have more potassium than a banana?! I didn’t!) And they’re such a pretty color! Fun to peel too! Just jazz them up with a few easy ingredients and BOOM! Perfect game day dip go to around.
This is a super easy recipe to pull together in next to no time. Whip some up before kickoff and knock out a second batch during half time if you need to. It’s very simple and can be scaled up easily to feed a watch party crowd… Just make sure you have a few extra ripe avocados on hand if you’re expecting a house full!
- 2 haas avocados
- ¼ Spanish (or red) onion, diced
- 1 large garlic clove, grated
- 1 jalapeño, diced
- 2 Roma tomatoes, diced
- ¼ cup fresh squeezed lime juice
- ⅓ cup fresh cilantro, chopped
- ½ teaspoon fine sea salt (or to taste)
- Dice the onion, jalapeño, and tomatoes and add them to a large mixing bowl.
- Peel the avocados by piercing the skin with a sharp knife and running the knife around the circumference of the avocado, around the pit. Remove the knife and gently twist one half of the avocado to release it from around the pit. Use the knife to remove the pit from the other half. Then run a spoon between the skin and flesh of the avocado to scoop the flesh into the bowl with the onion mixture.
- Pour the fresh-squeezed the lime juice over the avocado (you'll want to do this quickly to keep the avocado from turning brown).
- Add the grated garlic, salt and cilantro to the bowl, then mix everything together until all ingredients are incorporated and the avocado is broken down to your desired consistency. Taste and adjust seasoning as needed.
- Serve immediately with tortilla chips.
