This was a first for me. Usually when I’m eating, wanting or thinking about chips, they’re of the potato, tortilla or chocolate variety. I quickly came to realize that there’s a need for a healthier way to do this whole chip thing. Plus there were a couple apples sitting around that someone keeps reminding me I need to eat… 2 apples, one stone, as it were.
I have to say this recipe is incredibly easy, but also rather time consuming. So pick a day where you either plan to go nowhere or want an excuse to stay at home (at least for a couple of hours). The perk to this is of course the heavenly scent of apples an cinnamon that fill your house as these bake. So so delicious!
Really all you need is a quality mandoline, super-size baking sheets, apples, sugar and spices. And either parchment paper (my preference) or a couple of silicone baking mats. And time. Definitely time. Laundry anyone?
- 2 large apples (I used 1 Granny Smith and 1 Fuji)
- ¼ cup granulated sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- Preheat the oven to 200 degrees F and line 2 large baking sheets with parchment paper.
- In a small bowl, whisk together the sugar and spices, then set aside.
- Thoroughly wash and dry the apples. Carefully slice each one (whole) into thin slices using a mandoline. Arrange the apple slices in a single layer on each of the prepared baking sheets.
- Sprinkle the apples with the spiced sugar and bake for 1 hour. Flip the apple slices over and sprinkle the other side with cinnamon sugar. Return to the oven, switching the pans between top and bottom racks, and bake for another 60-75 minutes until thoroughly dry. Then turn off the oven and allow the apple slices to cool inside for another hour (this is when they'll crisp up).
2. You'll have more spiced sugar than you need for this recipe, but it's always great to have on hand.
